Mean 3 Bean Chili!

The past few times that Alex and I have gone to the Admiral Way Metropolitan Market, he circles the Mean 3 Bean chili like a vulture, tasting and …tasting again to make sure.

This last time I got the hint.

Operation Mean 3 Bean Chili commence:

It took a few days and a few stores, but about a week ago i assembled all the assorted cans and seasonings. I waited a bit to buy the meat.

hmm… Where the heck did my crock pot go? Was it lost in the fire, did it miss the truck making a move?

Target to the rescue! 4.5 quart Crockpot is mine!

As I’m giving an update at a cool presentation tomorrow, there was no way I’d get around to making the chili the night before Ze German was due to return. So its now or never.

Here is the Recipe:

Mean 3 Bean Chili

Ingredients

2 Tablespoons Olive Oil
1 whole white onion (diced) Or Kitchen Ninja’d
8 whole peeled garlic cloves
2 lbs Coarse Ground Beef for Chili
1 Tablespoon Chili Powder (I think i doubled it)
1 Tablespoon ground Cumin
1 teaspoon kosher salt
1/4 teaspoon crushed red pepper (optional) but I added way more + some Cayenne
1 15oz can of kidney beans, drained
1 15oz can of chickpeas (garbanzo beans), drained
1 15oz can of pinto beans, drained
1 15 oz can of diced tomatoes, UNdrained
1 12oz can of tomato paste
1/2 cup beef stock (may use chicken stock)

Directions:

Heat pan to medium-high, add oil and sauté diced onion and whole garlic cloves until onions become lucent.
Add coarse ground beef and brown.
Add chili powder, cumin, and kosher salt (and cayenne and crushed red pepper to taste and ghost pepper if you are my dive buddy Lamont)
Add beans, tomatoes and tomato paste.
Add beef or chicken stock.

Stir, cover, and reduce heat and simmer for 30 min (or put in your new awesome crockpot on high for like 4 hours)
Periodically stir and add more stock, if necessary, to desired consistency.

Serves 12 (or 4 if its feeding the german and my dive buddies)

Another holiday season survived….

Apologies for the disjointed nature of this post, i’m kind of covering a 2.5 week stretch of time and getting back in the swing of blogging…

Each year, from Dec. 23 – Jan 2, I would like to run away… maybe a diving trip, maybe a cross country motorcycle trip, maybe somewhere warm and tropical or even polar ice caps…  In any event, anywhere that is not in the midst of the chaos created by a facade of a holiday that makes people feel guilty by design.  Guilty about not seeing family enough, guilty about not liking some of their family, guilty about not buying people enough gifts,  guilty about not catching up with old friends that drove them nuts…    (or maybe that’s just me, but as we know, I’m getting in touch with my inner honeybadger so for the most part don’t give a shit, just have to watch everyone else as they get wound up in it)

Luckily despite the German’s desire to have a traditional little xmas holiday, he is reasonably understanding of my distaste for the whole business.  I give a little and decorate a tree complete with scuba bubbles (clear balls) for ornaments and lots of lights.

oh ya, the other problem with the holidays, is holiday hours at the gym.

how am I supposed to stick to my routine when they monkey with the hours! (ok, that almost sounds like whining)

Lucy-badger is totally crashed out, she got to play with sara the border collie mix and a lab at doggy-daycare today…  out cold.

Alex is off hunting coyote, his present this year was a ‘predator call’ from Foxturd Er.. Foxpro, a spitfire that was able to call in half the crows in west seattle in a matter of minutes when we tested it out in the back yard.   it also garnered the attention of a few neighbors which was mildly amusing “what is he hunting?  crows and neighbors?”

I’ve been on a movie watching binge.  Those who know me know that it has to be a simply AMAZING movie to get me to the theater.. Well, two great movies AND my holiday avoidance led me to TinTin (ok, and my brother got me tickets) and “the girl with the dragon tattoo”.   Can i just say i love the Cinerama in Seattle?  THANK YOU PAUL ALLEN!  (he saved it and restored it)   Sadly i get a bit fixated tho, and after watching GwtDT, i proceeded to stay up all night catching up on the swedish series 🙂  this meant yesterday was a wash, and today i had to nap after working an early morning shift in Federal Way.

Tomorrow i work with one of my all time favorite surgeons…  That is like a xmas/birthday present all in itself.  I always enjoy hanging out with someone as cynical as I am, even more so when I get paid to… (JUST KIDDING!)

From that point of view, this was a wonderful holiday season, I got to spend the surrounding time catching up with friends and family that ARE in fact very dear to me.   That was my birthday present..

Now all we need to do is get the city council to let Alki Crab and Fish Co. stay at Cove 2 and it will be a good start to the new year…
